Living in Texas means eating Mexican food a lot, which I honestly can’t complain about. What I love about this type of cuisine, other than the fact it’s absolutely delicious, is I can easily find lean proteins and grilled veggies while also getting a dairy serving in. (As you may have read, dairy foods help contribute to a nutrient-dense diet.) I also love that both dairy and Mexican food ingredients are very accessible and affordable, making it a breeze when shopping.
So this Cinco de Mayo, I’m opting to cook at home for my friends to better control the ingredients and nutrition. Here’s what I made in the test run. Click through to get the recipes!
Appetizer
Cheesy Guacamole paired with baked tortilla chips or veggie sticks.
Entrée
Stuffed Hatch Chiles with Cilantro-Lime Yogurt. I used regular oregano, chose mozzarella over queso fresco, and used plain Greek yogurt instead of regular yogurt.
Pair this with a side of mixed grilled veggies. I like bell peppers, onions, summer squash and zucchini.
Dessert
Lower Fat Tres Leches topped with sliced strawberries. Mmmm.
