Food safety is something that most Americans take for granted. As a Family and Consumer Science educator, I learned about food safety in college and grad school some and I’ve been ServSafe Certified by the Oklahoma Restaurant Association. And, as a mom, I do take food safety seriously. Foodborne illness is no laughing matter.
What is Pasteurization
Pasteurization is a process developed by French scientist Louis Pasteur in 1862 to keep food and drinks safe by eliminating harmful bacteria. For milk, it means heating it to just the right temperature to kill pathogens and then cooling it quickly to lock in nutrients and freshness. The result? A safe product ready for you to enjoy, however you like.
Pasteurization Process
- Heating milk at temperatures high enough to kill off any pathogens that can cause issues.
- Cooling back down to keep the pathogens from growing.
- Pasteurized milk still has the same natural goodness as it did before the pasteurization process.
- This simple and effective process also increases the shelf life of milk.
Shelf-Stable Milk
- Shelf-stable, or aseptic milk, uses a special type of pasteurization called Ultra High Temperature (UHT).
- UHT milk is shelf-stable, meaning it doesn’t need to be refrigerated until it’s opened, and it lasts much longer.
- You’ll often find shelf-stable milk in single-serve containers on grocery store shelves, perfect for on-the-go snacking or stocking your pantry.

Pasteurization also helps reduce food waste by extending milk’s shelf life. Add to that the fact that most dairy farms are family-owned—many working toward eco-friendly practices—and you’ve got a product that’s good for you and the planet.
