Ingredients

  • 1 (15-ounce) can black beans (approx. 1 ¾ cups, divided), drained and rinsed
  • ⅓ cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ cup breadcrumbs
  • 4 ounces shredded pepper jack cheese
  • ½ cup salsa
  • 8 slider buns

Instructions

  1. Preheat oven to 400° F.
  2. In a food processor or blender, combine 1 ¼ cup beans, onion, garlic and cumin. If you don’t have a blender, mash by hand with a fork or potato masher.
  3. Process until well combined.
  4. Add remaining beans, breadcrumbs and cheese and pulse several times.
  5. Transfer to a bowl and mix with hands until well combined.
  6. Form into 8 patties and place on a greased baking sheet.
  7. Bake for 18 minutes, flipping once halfway through.
  8. Serve on slider buns topped with 1 tablespoon of salsa per slider.
